Alvin Quah is baking the world a better place.

Celebrity chefs are calling on Aussie blokes to get behind this year's Red Cross Big Bake Cake by baking up a storm with friends, family and workmates.

Alvin Quah, one Australia's most loved TV chefs will be putting on his oven gloves with Olympic swimmer Eamon Sullivan and celebrity chefs Adriano Zumbo and Adrian Richardson to encourage us all to join the Big Cake Bake.

Alvin Quah is well known for his animated, witty and approachable demeanour.

"There is something quite therapeutic about baking, even for men," says Alvin, "whether it's the murmur of the electric beater or the hypnotic appeal of folding batter.

"The Big Cake Bake is a great chance for us all to show what we can do in the kitchen and support the valuable work of Red Cross here and overseas."

The official Big Cake Bake day is Monday 26 August but to make sure nobody misses out, events can be held anytime throughout August.

For first time cooks, Alvin recommends pumpkin pie.

"I use a good quality store bought pastry, but feel free to make your own pastry and for the pumpkin I use the Japanese or the butternut varieties."

Pumpkin pie
250g store-bought shortcrust pastry
2 free range eggs
70g icing sugar, sifted
280g pumpkin, peeled
250ml cream
1 tsp ground cinnamon
1/4 tsp ground ginger
1/2 tsp nutmeg
pinch of salt

Preheat oven to 200ºC. Roll out pastry to line a 20cm pie dish. Cover pastry with baking paper then fill with rice and bake for 15 minutes. Remove paper and rice and bake for 10 minutes. Remove from oven. Reduce temperature to 165ºC. Cut pumpkin into 4-5cm chunks and steam for 20 minutes until tender then put it through a blender and process until you get a smooth puree. Beat eggs and sugar until light and pale, approximately 3 minutes. Fold in pumpkin puree, ground cinnamon, ginger, nutmeg and salt. Bake for 35-40 minutes or until set. Cool completely then refrigerate before serving.
